Eriodictyol is a bitter-masking flavanones, an anthocyanin extracted from Herba Santa （Eriodictyon californicum） a plant growing in America.[1] Eriodictyol is one of the 4 flavanones identified by Symrise in this plant eliciting taste-modifying properties: homoeriodictyol, its sodium salt and sterubin.
Eriodictyol was also found in the Lemon Fruit, the twigs of Millettia duchesnei [3], in Eupatorium arnottianum[4] and one of its glycoside in rose hips （Rosa canina）.
267 °C略微溶于沸水、熱乙醇及冰醋酸,溶于稀堿。
